I am offering free community classes via Zoom! Class times, Zoom details and ingredients are all listed below

My goals are to:

  • Create some social togetherness during this time of social distancing. 

  • Provide an activity for you and your kids.

  • Make a yummy, nourishing meal or snack using simple ingredients.

Monday, 6/1 @ 6 pm - Summer Favs

What are we making?

  • Panzanella Salad

  • Pesto

  • Red Onion Relish

These 3 things are in my regular rotation all summer long. Serve these with grilled chicken, fish or any kind of burger for a complete dinner.

Panzanella Salad

Specific amounts not listed because it's all flexible.

  • Crusty bread – like a baguette, ciabatta or sourdough. If it’s a little hard, even better

  • Fresh mozzarella cheese

  • Tomatoes

  • Fresh Basil

  • Spinach leaves (or kale) – you can also do this without green leaves and increase the cucumber, tomato

  • Cucumber

  • Avocado - optional

  • Corn - raw or grilled or frozen - optional

  • Good olive oil

  • Salt

  • Pepper

 

Pesto

Pesto is traditionally made with basil, but it can be made with many other greens. Feel free to swap out the basil for arugula, spinach, ramps, beet green

  • 2-3 giant handfuls of basil

  • ½ cup Pine nuts ( or walnuts, sunflower seed, pumpkin seeds, pistachio nuts, almonds) toasted (you can omit)

  • Parmesan cheese (or nutritional yeast for dairy free or omit)

  • Lemon

  • 1-2 cloves of garlic or garlic scapes (in season now)

  • good olive oil

 

Red onion relish

This is so amazing to have around. Top your burgers, chicken, hot dogs, eggs with it. Addictive.

  • 2 Tbsp extra virgin olive oil

  • 4 red onions, sliced thin

  • 1 cup apple cider vinegar

  • ¾ cup honey

  • ¼ tsp salt

Equipment

- Sheet pan

- Large salad bowl

- Food processor

- Large saute pan

Monday, 6/8 @ 6 pm - Dinner with some Spanish Favs

What are we making?

  • Whole roasted cauliflower with tzitiki 

We can also season some chicken breast/thighs or a piece of salmon the same way in addition or instead of the cauliflower and serve with tzatziki  

  • Salmorejo - A type of gazpacho that we fell in love with in Spain and very refreshing for summer

  • Pan Con Tomate - Another Spain Fav

Whole Roasted Cauliflower 

 adapted from Minimalist Baker

  • One big whole cauliflower. Leaves trimmed but core intact

  • Spices (this is flexible)

    • ½ tsp ground cinnamon

    • 1/4 tsp cardamom 

    • 1 tsp ground coriander

    • 1 ½ tsp ground turmeric

    • 1/2 tsp ground ginger

    • 2 tsp smoked paprika

    • 2 Tbsp ground cumin

    • 1/8 tsp cayenne pepper or black pepper

  • ​2 Tbsp avocado oil (or melted coconut oil or olive oil)

  • 2 Tbsp water

  • ½ tsp salt

  • 2 tsp maple syrup - optional

We can use all of the above to also season chicken or fish (salmon would be great)

Equipment

- Cast iron skillet or another oven-proof skillet or pan

- small baking dish

- brush

Tzatziki

  • 1 cucumber 

  • 1 ½ cups plain Greek yogurt

  • 2 tablespoons extra-virgin olive oil

  • 2 tablespoons chopped fresh mint and/or dill

  • 1 tablespoon lemon juice

  • 1 medium clove garlic, pressed or minced

  • ½ teaspoon fine sea salt

Salmorejo

  • 4-5 large tomatoes or 5-6 medium sized

  • 1 slice of dense stale white bread

  • 1/2 cup olive oil

  • 1 tsp salt

  • 1 small garlic clove

  • 1 tsp sherry vinegar (cider vinegar ok too)

  • hard boiled egg and/or diced ham/prosciutto  as a topping - optional

Pan Con Tomate

  • A good loaf of bread, like ciabatta

  • 2 tomatoes

  • 2 cloves of garlic

  • salt

  • olive oil
